Reuse Denver: Los Molinos at Auraria
Los Molinos is a busy, family-run Mexican restaurant on the Auraria Campus. It offers counter service in the food court, and is a favorite among students and faculty. The restaurant started with the idea to offer better options than fast food. Los Molinos serves affordable, homemade meals in a friendly setting. With two stories and an outdoor patio, it’s a popular spot for studying and socializing. Ivy Camillas is the owner-operator and says events like Taco Tuesday draw in crowds.
Los Molinos participates in the campus composting program for food scraps. But before joining Reuse Denver, the restaurant never offered reusable dishes to customers. Ivy wanted to reduce more waste, cut costs, and create a cozy atmosphere at the restaurant. She switched to reusable service ware for dine-in customers to achieve these goals.
